Brown Sugar, blueberries, herb-like, lemon
El Bombo is a distinctive coffee cultivated in Colombia’s renowned Huila region, where it is produced by 15 dedicated female farmers from the Asobombo cooperative. Situated at altitudes between 1,350 and 1,800 meters, this coffee benefits from Huila's fertile soils and diverse microclimates, which together shape its exceptional character.
With a strong commitment to organic practices and sustainable cultivation, the women of Asobombo handpick only the ripest red cherries, to process the coffee directly on their farms. Each cherry is pulped using small hand-crank pulpers and then undergoes fermentation in tanks for 12 to 36 hours, enhancing the coffee’s depth and clarity. Following fermentation, the beans are washed in clean water and carefully dried on parabolic beds, marquesinas, or patios, with frequent raking to ensure even drying.
These dedicated farmers are part of a larger initiative; about 60 women in Huila and Cauca participate in Asobombo’s women’s program. This program indirectly supports around 180 people, including children and family members, through the cooperative’s focus on gender and opportunity equality.
With an SCA score of 85.5, El Bombo exemplifies the craftsmanship and dedication of its producers.
Tasting Notes:
A smooth blend of brown sugar sweetness and juicy blueberry notes, balanced with herb-like undertones and a zesty lemon finish. El Bombo offers a rich and lively profile, capturing the vibrant complexity that defines Colombia's Huila coffees.
