The Catuai variety, a hybrid of Yellow Caturra and Mundo Novo, is known for its adaptability and compact size, which allows for efficient harvesting and a consistent yield. The coffee is processed using the black honey anaerobic method, where cherries are partially depulped, fermented in anaerobic conditions, and then dried with a portion of their mucilage intact.
