Nestled in the iconic San Salvador Volcano, this single-origin coffee reflects the richness of its volcanic environment. The nutrient-dense soils and high elevation of 1700 meters provide the perfect conditions for cultivating exceptional coffee.
This Arabigo and Bourbon varietal is crafted by Fernando Alfaro and his family at the Miramar farm, a boutique operation focused on producing high-quality micro-lots. With over 30 years of experience, Fernando has perfected the art of coffee production, combining traditional practices with innovative techniques.
The coffee undergoes a natural anaerobic process, beginning with selective harvesting of ripe cherries. A controlled 192-hour fermentation with carefully cultivated cultures enhances its vibrant profile. Slow drying on raised beds for 30 days, followed by a 60-day resting period, ensures a refined, flavorful cup.
