Strawberry jam with citrusy bergamot, very balanced acidity
Senkole is a remarkable coffee from the Guji region of Ethiopia, cultivated by smallholder farmers near Haro Wachu town and processed at the Senkole Washing Station. Nestled at elevations ranging from 1,500 to 2,000 meters, this region’s sandy loam soil provides exceptional drainage and fertility, creating optimal conditions for coffee cultivation.
Ethiopian coffee is traditionally grown on small plots of land, where farmers interplant coffee with other crops, preserving biodiversity and natural soil health. During the January and February harvest season, producers handpick only the ripest cherries before delivering them to the washing station, where they are sorted, weighed, and processed using Ethiopia’s time-honored techniques.
This naturally processed Heirloom coffee is dried with the fruit intact on raised beds, allowing the beans to absorb deep, fruity complexity. The result is a vibrant and aromatic cup, showcasing Ethiopia’s rich coffee heritage.
Tasting Notes:
A luscious coffee with sweet strawberry jam notes, complemented by the bright, citrusy elegance of bergamot. Its balanced acidity and smooth mouthfeel.
