Ripe fruit, red fruits, sultanas, mango
Yirgacheffe, located in the Aricha - Konga region of Ethiopia, is renowned for its high-altitude coffee cultivation at 2150 meters above sea level. The unique terroir and growing conditions of this area, combined with traditional farming methods, produce coffees with extraordinary complexity and flavor. The coffee is naturally processed, enhancing the fruity characteristics and adding to the overall depth of the cup.
This Yirgacheffe coffee, with an impressive SCA Cupping Score of 90.25, is sourced from smallholder farmers in Aricha, where the average farm size is about half a hectare. These farmers grow their coffee under the shade of Abyssinian banana trees, creating a natural environment that contributes to the coffee's organic quality, though it is not certified due to the cost.
The post-harvest process involves fermenting the coffee in plastic barrels for 9 days and drying it on raised beds for 13-18 days. Once processed, the coffee is stored locally before being transported to Addis Ababa.
