Elegant & Zesty Coffee – Gesha Zest, Colombia

Gesha Zest is a truly exceptional coffee from the lush mountains of Acevedo, Huila, Colombia, showcasing the unparalleled potential of the Gesha variety. Cultivated at 1,890 meters on Finca Bella Alejandria, this coffee is produced by Wilder Lazo, a passionate and innovative coffee grower. With a commitment to quality and experimentation, Wilder has developed a varietal program featuring over a dozen unique coffee varieties, making Gesha Zest a testament to his dedication.

This semi-washed anaerobic process enhances the coffee’s vibrant floral and citrus complexity. After being carefully hand-sorted and depulped, the cherries undergo a 140-hour anaerobic fermentation in GrainPro bags, allowing the natural sweetness and acidity to intensify. The process continues with a second fermentation in plastic tanks for two days, followed by an 18-day drying period under the sun. During this stage, tangerine peel is added to the parchment, infusing the beans with a bright, citrusy twist. Finally, the coffee is stabilized in GrainPro bags for 25 days, ensuring a refined and fully developed flavor.
