Finca Las Huertas is home to an exceptional Gesha coffee, cultivated at 1,700 meters in the Fraijanes region of Honduras by Carlos Amaya. While the high-altitude conditions create the perfect environment for producing high-quality coffee, they also present challenges, including high humidity, cloud cover, and low temperatures.
Carlos Amaya’s agroforestry approach ensures that his farm maintains an impressive 97% shade density, reducing soil erosion, stabilizing slopes, and enriching the soil with essential nutrients. This sustainable method not only enhances coffee quality but also increases carbon storage, making Finca Las Huertas an ally in the fight against climate change.
The natural processing method at Finca Las Huertas is meticulously controlled. After being hand-picked at peak ripeness, determined through Brix readings, the cherries undergo an 88-hour submerged fermentation in barrels, intensifying their fruity and floral complexity. They are then carefully dried on raised beds for 30 days, ensuring a cup full of depth and vibrancy.
