Mandarin, Pear, Almond, Cherry Blossom
Tenejapa, located 1000-1350 meters above sea level in the Chiapas highlands, is a stunning area known for its rich Tzotzil Maya culture and beautiful natural scenery. Its unique environment is ideal for growing high-quality specialty coffee.
This selection from smallholder farmers showcases varieties such as Caturra, Costa Rica, Typica, and Marsellesa, grown in nutrient-rich soils and processed with care. Each farmer follows traditional on-farm methods, handpicking ripe cherries and employing a meticulous washed process to bring out the coffee’s clean and vibrant flavor.
The beans are fermented for 12-17 hours, washed in fresh water, and sun-dried on patios for 12-14 days, ensuring consistent quality and a balanced cup. The result is a coffee that captures the essence of Tenejapa's lush landscape and rich tradition.
Tasting Notes:
This delightful blend of mandarin orange, pear, almond, and cherry blossom has bright acidity, a smooth body, and a floral finish. It is perfect for a refined and aromatic brew.
