This Special Lot comes from Yaye Washing Station in Sidamo, Ethiopia, at 2230 meters above sea level. Grown from local Heirloom varieties, the high elevation supports slow cherry maturation, contributing to clarity and intensity in the cup.
Processed using an anaerobic natural method, the cherries ferment in a controlled oxygen-limited environment before drying. This approach enhances fruit expression and sweetness while maintaining structure and balance.
