Iced Tea & Hibiscus Colombia Coffee
Pink Bourbon from Huila, Colombia, produced by Diego Vergara at Finca Las Flores (1700 masl). This Special Lot reflects a precise, research-driven approach to processing and quality control, expressing the full potential of the Pink Bourbon variety in a high-altitude Andean microclimate.
The lot undergoes extended fermentation followed by a controlled thermal shock process. The coffee is first exposed to hot water (around 50°C) and then rapidly cooled (approximately 20°C). This temperature contrast stabilizes fermentation, helps preserve aromatic compounds, and enhances clarity and structure in the cup. Drying is completed in a sealed stainless-steel dehumidifying system to 11% moisture, followed by a stabilization period for consistency and longevity.
