Soledad Sidra Wave Washed is produced by Pepe Jijón at Finca Soledad, high in Ecuador’s cloud forest. What began as a professional relationship quickly grew into a close friendship, rooted in shared values around quality, transparency, and the belief that coffee can be a positive force for people, farms, and the forests that surround them.
Pepe is the creator of the Wave Washed process, an innovative fermentation method defined by carefully controlled temperature shifts. During fermentation, the coffee moves from warmer to cooler environments, using tanks and refrigeration to guide microbial activity with precision. This temperature “wave” allows for exceptional control, resulting in a cup that is remarkably clean, vibrant, and expressive.
Grown in the Intag Valley at 1550 meters above sea level, this lot features the Sidra variety, celebrated for its aromatic intensity and elegant structure. The final cup showcases lifted florals, bright citrus character, and a silky, syrupy mouthfeel with outstanding clarity.
