Grown in the Sidama region of Ethiopia at 1,950ā2,500 MASL, Dembi is produced by around 1,200 smallholder farmers cultivating traditional heirloom varieties. Cherries are handpicked at peak ripeness and carefully sorted before undergoing natural processing.
After floating to remove defects, the cherries are shade-dried on raised beds for 8ā25 days, rotated regularly to ensure even drying. Once moisture reaches 11.2%, the coffee rests for four weeks before hulling and export preparation. This meticulous process enhances clarity and depth in the cup.
Designed for espresso, this coffee offers comfort and a classic profile with layered complexity.
