Produced from 100% Arabica Catuaí Amarelo, this microlot undergoes an anaerobic co-fermentation with IPA beer yeast for 36 hours. This experimental process enhances fruity aromatics and introduces bright citrus and tropical characteristics while maintaining a clean, structured cup.
The result is a distinctive and expressive coffee with layered fruit notes and a subtle hop-like freshness. Best suited for filter brewing, where its complexity and aromatics can fully develop.
