Metacafeína is a rare Colombian microlot from Finca El Paraíso in Cauca, produced by Diego Bermudez and roasted by SOLO Brewing Coffee Roasters. Grown at 1,960 MASL, this Castillo variety reflects the farm’s reputation for highly controlled processing and expressive sensory profiles.
This lot undergoes an extended 720-hour fermentation with lactobacillus, followed by a thermal shock process. The result is a bold, layered, and highly distinctive coffee with bright acidity, complex structure, and an aromatic profile that pushes far beyond traditional expectations.
In the cup, Metacafeína is intense, exotic, and multidimensional. Notes of crushed pink peppercorn, port wine, and mint candy create a vivid sensory experience with sweetness, spice, freshness, and depth. Best suited for filter brewing, where its complexity and unusual character can fully unfold.
