Nicaragua Agua Sarca Natural Anaerobic is a distinctive specialty coffee from the highlands of Dipilto, a region known for its fertile soils and expressive coffees. This exceptional lot is produced on a 20-hectare family farm with an on-site natural reserve, shaped by three generations of coffee producers committed to quality, sustainability, and innovation.
Grown at 900–1000 metres above sea level, Agua Sarca benefits from a unique microclimate that enhances sweetness and aromatic complexity. In recent years, the producers have worked closely with an agro-engineer to introduce new varieties and extend fermentation times, pushing the quality and character of their coffees further.
This lot is made up of Yellow Catuai and processed using a natural anaerobic method, intensifying fruit expression while maintaining balance and clarity. The result is a vibrant, aromatic cup with floral lift and layered sweetness. In the cup, expect bright notes of kumquat and apple, supported by honeyed sweetness and delicate floral tones.
In recognition of its quality, Agua Sarca achieved 17th place in the Cup of Excellence Nicaragua 2020, highlighting the farm’s successful blend of heritage, innovation, and respect for nature.
