In the hills of Armenia, Quindío, lies Finca Villarazo, the farm of renowned producer Jairo Arcila. This microlot of the Castillo variety is grown at 1,450 meters above sea level and showcases a bold and layered flavour profile, crafted through an innovative post-harvest method that enhances clarity and complexity.
The cherries undergo a 24-hour dry aerobic fermentation, followed by 50 hours of fermentation in sealed GrainPro bags under cool conditions (below 22°C). After fermentation, they are dried on raised beds under the sun until they reach 11% moisture content, locking in sweetness and aromatic depth.
