Yerba principe, red apple, caramelized sugar
High in the Loja province of southern Ecuador, in the mountainous region of Altos de Saraguallas, smallholder farmers produce a vibrant and clean coffee that reflects the land's biodiversity and cultural richness. Nestled near the Puyango River, the farms lie at 1,300 to 1,800 meters above sea level, where fertile volcanic soil and cool highland climate combine to create ideal growing conditions for Typica and Bourbon varietals.
This community-grown coffee is part of a broader agro-ecological system: in addition to coffee, families cultivate maize, sugarcane, beans, and fruit, while also practicing beekeeping and water management. Many producers follow sustainable methods, including agroforestry and increasingly anaerobic fermentation techniques.
The washed process begins with selective handpicking of ripe cherries, followed by double fermentation and washing, then a slow drying phase of up to 18 days, enhancing clarity and sweetness.
